Sour milk can be the basis for a wide variety of dishes - creams, sauces, baked goods. You can use an already sour product or ferment it yourself. The main thing is not to eat milk, which has become bitter - it will not make tasty dishes from it.
Sour milk cream
This cream with a light orange flavor can be served in the afternoon or afternoon tea. You will need:
- 0.5 liters of sour milk;
- 1 glass of sour cream;
- 0.75 glasses of sugar;
- 1 teaspoon of gelatin;
- 1 orange.
Cut the zest from the orange, cut the pulp thinly into circles, removing the seeds. In a bowl, stir well the sour milk and sour cream. Add sugar, thinly sliced orange zest and gelatin dissolved in half a glass of water. Place the bowl in a bowl of ice and beat until thickened. Spread the cream in vases, put a thin circle of orange on top, sprinkle with powdered sugar and refrigerate for 2 hours.
Homemade cottage cheese
Sour milk can be used to make delicate cottage cheese, which turns out to be much more delicious than purchased. If the milk has just begun to turn sour, speed up the process by adding a couple of tablespoons of kefir or sour cream to it. Let the milk turn into curdled milk and start making cottage cheese.
Pour the yogurt into an enamel pot and place it on the stove. Heat over low heat until the contents of the saucepan begin to stratify into cottage cheese and whey. Do not heat the mixture too much and never let it boil. Do not cook the cottage cheese for a long time, otherwise it will become dry and tough.
Strain the contents of the saucepan through cheesecloth in a colander. Tie the curd in cheesecloth and hang the knot over the sink to drain the excess liquid. The product will be ready in 5-8 hours. Serve with sour cream, jam, honey, or fresh berries.
Do not pour out the whey formed when cooking cottage cheese - it will be useful for making dough or diet drinks.
Cheese cake
Sour milk can be used to make a quick pie dough. Use feta cheese or salted cottage cheese with herbs as a filling. You will need:
- 4 eggs;
- 0.5 liters of sour milk;
- a pinch of salt;
- 1 teaspoon of baking soda;
- 2 tbsp. tablespoons of sugar;
- 1 teaspoon of lemon juice;
- 2 tbsp. tablespoons of vegetable oil;
- 2 cups wheat flour;
- 300 g feta cheese.
According to this recipe, you can make pies with any fillings, including sweet ones.
Beat eggs with sugar, add salt and sour milk. Mix everything until smooth and add the pre-sifted flour in portions. Add vegetable oil and soda, slaked with lemon juice. The dough should be semi-liquid.
Grease a round shape with butter and pour the dough into it. Spread pieces of feta cheese over the surface and place the dish in the oven preheated to 180 ° C. Bake until golden brown and serve warm or cold.
