Cherry jam is a delicious aromatic delicacy containing vitamins C, B2, P, folic acid and iron. The best jam is made from late varieties of cherries. It can be prepared with or without seeds.

It is necessary

  • - 1 kg of cherries;
  • - 1 kg of sugar (the amount can be increased according to your taste).

Instructions

Step 1

Peel the leaves and sticks from the berries, rinse them. Remove the pits from the cherries using the special tool. Add half the sugar to the berries and leave overnight. At the same time, cherries will give a lot of juice.

Step 2

In the morning, place the sugar and cherries over medium heat and simmer for 15 minutes. Turn off the heat and cool the jam. Drain all the syrup into a separate bowl, add the remaining sugar there, stir well and cook over medium heat. Leave the saucepan with the berries aside for now.

Step 3

After a while, check the cherry syrup for consistency. Pour cold water into a saucer and drop a drop of syrup into it. It should not spread, if a thick drop has formed - the syrup is ready.

Step 4

Pour berries into the prepared syrup, mix and pour into previously prepared washed and sterilized jars. When the cherry jam has cooled, it will be thick.

Step 5

Cook thick aromatic jam from cherries with seeds. Sort out and rinse the berries. Boil the syrup with 1 glass of water and all the sugar. When it turns transparent, add the cherries, stir, bring to a boil and turn off the heat.

Step 6

Leave the jam to cool completely, then turn on the heat, bring it to a boil, remove from heat and wait for the jam to cool. Put the jam on the fire for the third (last) time and cook until tender. Determine doneness as follows: Put a drop of jam on any cold surface (spoon, saucer). If the drop does not spread, it is ready.

Step 7

While the cherry jam is cooking, rinse and sterilize the jars. Spread hot jam in them and cover with sterilized lids. Place the jars with the lids down and cover them with something that keeps warmth (such as newspapers and heavy towels). After an hour, remove the "thermal insulation", turn the cans over, wait until they cool completely and put them away for storage.
