Coffee is the most popular drink today. Its aroma is associated with early morning, and the taste is familiar to everyone. But if we are serious about the taste of coffee, you can think about it. After all, there are a considerable number of varieties and methods of preparing this drink, and each of them has its own taste.
Arabica or robusta?
Despite the wide variety of coffee trees, only two varieties are used to prepare an invigorating drink: Arabica and Robusta. It should be noted that among themselves they are very different in taste. However, there is no competition as such, because about 70% of all production is devoted to Arabica.
Arabica wins due to its delicate, but at the same time rich taste, which is also varied and depends on the location of the tree. Robusta is used less often, mainly for making espresso and blended coffees. The fact is that the fruits of this coffee tree have a specific bitter taste. It can be softened only when mixed with grains of other trees and spices. By the way, it is Robusta that is used in the preparation of instant coffee, since as a result of the process, the bitter taste practically disappears.
More often, masters prepare mixed coffee varieties, combining grains of different trees into a single aroma. Therefore, there are exactly as many varieties of coffee as there are coffee trees and possible combinations. Only true gourmets and the masters themselves are able to distinguish between these varieties.
The most expensive coffee
The elite Kopi Luwak coffee is well known among gourmets. Not only the taste of the drink is interesting, but also the history of its production.
The protagonist of the story is a feline animal named civet (or luwak). Civetta loves to feast on coffee beans and is naturally endowed with a talent for choosing only the best. However, the small stomach of a wood cat is not able to completely digest the "treat", and some of the selected grains are excreted from the body naturally. The plantation workers harvest these grains, peel and roast.
What makes such an unusual taste? A scientist from Canada Massimo Marcone tried to answer this question. He found that there are enzymes in the body of the civet that break down the proteins contained in the grains. As a result, the coffee loses its bitter taste and becomes very tender.
Caramel coffee
Very tasty is the coffee called Torrefacto from Spain. Its preparation goes beyond the ordinary roasting of beans. The ingredient that influenced the taste of this drink is regular granulated sugar. When roasting, caramelization occurs, and the grains acquire a glossy sheen.
Research has shown that this coffee is a good source of antioxidants. These substances, in turn, protect the body from premature aging.
On the Russian market, this type of coffee is represented by the well-known Spanish brand Oquendo.
What type of coffee should you choose?
Coffee can be divided into types depending on the method of preparation. The most common type is instant coffee. Its popularity is due to its ease of preparation and inexpensive price, but this coffee is in the last place in terms of quality.
Ground coffee tastes better than instant coffee. You can cook it both manually and using a coffee machine. If your choice is on this type, then carefully study the existing types of grind before buying.
The most difficult coffee to prepare is grain coffee. But this complexity is fully compensated by the taste of the resulting drink. True, in order to prepare it, you need to have a professional coffee machine at home and know how to choose and store grain correctly.
