Meatballs is a meat dish made from boiled or fried balls of minced meat. Meatballs are prepared from beef, pork, lamb, chicken, turkey, rabbit and fish. They are served to the table, as a rule, with some kind of sauce, which makes the dish juicier and tastier.
It is necessary
- For sweet and sour sauce:
- - 2-3 carrots;
- - 2 heads of onions;
- - 100 g of prunes;
- - 1 tbsp. l. tomato paste;
- - 100 ml of dry wine;
- - Bay leaf;
- - granulated sugar;
- - salt;
- - pepper;
- - vegetable oil.
- For lemon sauce:
- - 3 egg yolks;
- - 3 tbsp. l. flour;
- - 400 ml of meat broth;
- - 2 tbsp. l. butter;
- - 5 tbsp. l. lemon juice;
- - 1 tbsp. l. chopped parsley;
- - ground red pepper;
- - salt.
- For natural sour cream sauce:
- - 500 g sour cream;
- - 2 tbsp. l. flour;
- - 2 tbsp. l. butter;
- - pepper;
- - salt.
- For Spanish mushroom sauce:
- - 2 tbsp. l. butter;
- - 150 g of porcini mushrooms;
- - 50 ml of semi-dry white wine;
- - 1 glass of strong meat broth;
- - 2 glasses of tomato juice;
- - 1 tbsp. l. flour.
Instructions
Step 1
Sweet and sour sauce
Rinse the prunes and cover with hot water for about 15 minutes. When it swells, fold it in a colander, let the water drain and finely chop the prunes. Peel the carrots and onions, wash and chop: grate the carrots on a coarse grater, and cut the onions into small pieces. Then fry the prepared vegetables in vegetable oil. Add chopped prunes, tomato paste, bay leaf, salt, granulated sugar, black pepper and allspice. Mix everything well and cover with dry white wine. Simmer the sauce for 10-15 minutes and remove from heat. Then put the finished meatballs in a fireproof dish and pour over the prepared sweet and sour sauce. Place in a preheated oven and bake for 20-25 minutes.
Step 2
Lemon sauce
Heat the butter in a water bath. Fry the flour in a dry, well-heated frying pan and, stirring constantly so that there are no lumps, pour in the hot broth. Then mix with melted butter and simmer in a water bath until thickened. Then set aside 3 tablespoons in a separate bowl and refrigerate. Separate the yolks from the whites and beat the egg yolks thoroughly with freshly squeezed lemon juice and 3 tablespoons of chilled sauce. Combine the resulting mixture with the main mass of the sauce, season with salt and pepper, stir and heat for 3 minutes in a water bath, stirring constantly. Remove prepared sauce from heat, add finely chopped parsley and stir well. Pour lemon sauce over the meatballs before serving.
Step 3
Natural sour cream sauce
Fry flour in butter until brownish. Then add sour cream and simmer everything over low heat for 5-10 minutes, stirring constantly. Finally, add salt and pepper to taste, stir, remove the sauce from heat and strain. Then put it back on the fire and bring to a boil, but do not boil. Pour the cooked sour cream sauce over the meatballs and serve.
Step 4
Spanish Mushroom Sauce
Melt the butter in a skillet. Peel the porcini mushrooms, cut into slices and fry for 5 minutes in melted butter. Then add wheat flour and fry with the mushrooms. After that, pour in tomato juice, strong meat broth and wine. Mix everything well and simmer the sauce over low heat for 15 minutes, stirring occasionally. Remove the prepared mushroom sauce from the heat and pour over the meatballs.
