Stewed potatoes with mushrooms have long been present on the Russian table. Delicious, aromatic and satisfying, it can be either an excellent side dish for meat and vegetables, or an independent dish. The main thing is to cook it from fresh mushrooms.

- mushrooms - 300 g;
- potatoes - 500 g;
- onion - 1 piece:
- sunflower oil - 2 tbsp. spoons;
- fresh herbs - 1 bunch;
- salt and pepper to taste.
Instructions
Step 1
Choose mushrooms. For the preparation of this dish, it is best to use porcini mushrooms or chanterelles - they will give it a unique aroma. But any others will do as well. The only mushrooms that are better not to be used are champignons, as stewed potatoes and onions will overwhelm their taste.
Step 2
Prepare mushrooms and vegetables. Peel potatoes and onions. Rinse the mushrooms with boiling water, and then wash thoroughly under running water. Cut off the ends of the legs and cut the mushrooms into thin, large pieces. Moreover, the thinner they are, the less time it will take to prepare them.
Step 3
If using dried mushrooms, soak them in hot water for 30 minutes first. Then rinse thoroughly in a colander and cut into pieces.
Step 4
Heat some sunflower oil in a skillet and add the chopped mushrooms to it. Fry until half cooked for 15 minutes.
Step 5
While the mushrooms are roasting, cut the potatoes into cubes and place them in a saucepan or stewpan with a little water. The more water there is, the more liquid the dish will turn out to be. Place the pot on the fire and bring the potatoes to a boil.
Step 6
Once the potatoes have boiled, season with salt and reduce heat. After 5 minutes, add the fried mushrooms and diced onion to it. Mix everything thoroughly and simmer until the potatoes are soft. Add some black pepper and remove from heat.
Step 7
Divide the dish into deep bowls until it has cooled down. Garnish with fresh parsley, dill and green onions. And then serve. To make it even tastier, place pickles or tomatoes next to stewed potatoes and mushrooms.
Step 8
During cooking, you can also add a couple of tablespoons of sour cream or mayonnaise to the potatoes. This dressing goes well with mushrooms, and the color and taste of the dish becomes more interesting.
