    • 1 clove of garlic;
    • greens to taste;
    • 3 eggs;
    • 2 tbsp. tablespoons of flour;
    • bitter red pepper to taste;
    • vegetable oil;
    • salt.

Step 1

Take the required number of eggs and break them into a bowl in which you will knead the pancake dough. Add some hot red pepper there to taste and beat the mixture with a fork. Finely chop the greens and the peeled garlic clove previously washed under running water with a knife, add them to the bowl with the beaten eggs. Stir the mixture thoroughly.

Step 2

Rinse the zucchini and, if the zucchini is large and the skin is too thick and coarse, carefully cut it off with a knife. In the event that you have chosen a small vegetable with a thin skin for making pancakes, you can leave it. After that, grate the zucchini on a coarse grater. Quickly, until the grated vegetable gives juice, add it to the previously prepared mixture of eggs, pepper, herbs and garlic. Mix everything thoroughly, adding the required amount of flour according to the recipe. Do not add salt to the dough, otherwise the zucchini will release a lot of juice and the dough will become runny.

Step 3

Place a frying pan over medium heat and add vegetable oil. The oil should be just enough to cover the entire bottom of the pan. Now take a tablespoon, scoop up the pancake dough with it and carefully place it in the pan. Use a spoon to shape the dough into a round shape. Place the lid on the pan and fry them until the side they are on is golden brown. Then gently flip the pancakes over to the other side. While the second side of the zucchini pancakes is being prepared, salt the one that has already been fried to taste.

As soon as the second side of the dish is also browned, place the prepared fritters from the pan on the dish. And do it so that their unsalted side is on top. Salt it to taste, let the pancakes cool a little and serve them to the table, decorating with pre-washed and chopped herbs.
