Baked Pepper Beef is a traditional Spanish dish. It is served not on the day of preparation, but the next day, so that the meat absorbs all the aromas and becomes even more delicious and tender.

- - 2 beef necks;
- - 2 large onions;
- - 2 tomatoes;
- - 2 stalks of leeks;
- - 2 cloves of garlic;
- - 2 carrots;
- - an egg;
- - flour;
- - peppers baked in the oven;

- - olive oil.
Instructions
Step 1
For this recipe, you must first bake 2 small red peppers in the oven. It is very simple to do this - just peel them, cut each into several pieces, put in a baking sheet, pepper and salt, sprinkle generously with olive oil and bake for an hour at a temperature of 170C.
Step 2
We wash the beef necks very well and boil them in a saucepan with onions, leeks and carrots for an hour. We take out the meat, filter the broth and set it aside. Cut the meat into 2 cm thick pieces.
Step 3
Dip the meat in flour and in an egg, fry in a large amount of heated olive oil. We transfer the beef to a paper towel and proceed to the sauce.
Step 4
In a frying pan, fry chopped onion, leek stalk and carrots, cut into small pieces in olive oil. When they turn golden, add the peeled and diced tomatoes. Simmer vegetables over low heat for 15 minutes.
Step 5
Pour the broth into the pan, lay out the pieces of meat and baked peppers, salt to taste. Bring to a boil and simmer over low heat for 30 minutes. Let the meat cool, put it in the refrigerator for a day.
Step 6
We serve the dish hot the next day.
