If you have some mushrooms in your fridge, then you can make an insanely delicious vegetable stew from them. It is prepared very quickly and easily, which does not affect the taste in any way.

Ingredients:

  • Bell peppers - 5 pcs;
  • Fresh tomatoes - 4 pcs;
  • Fresh cucumber - 2 fruits;
  • Fresh mushrooms - 250 g;
  • Onions - 2 pcs;
  • Olive oil - 5 tablespoons;
  • Spices for vegetable stew;
  • Nutmeg - to your liking;
  • Ground black pepper and salt.

Preparation:

  1. Sort fresh mushrooms, peel, wash and chop into slices.
  2. Wash the bell peppers thoroughly, remove the stem and core. Divide each pod into quarters and chop into strips.
  3. Wash the tomatoes well, then pour boiling water over them, wait 1 minute and remove all the skin. Divide the pulp into sections. Peel and chop all onions into strips.
  4. Preheat olive oil in a frying pan, add chopped mushrooms and onions to it, salt everything well and pepper to taste.
  5. Fry vegetables for 20 minutes at medium temperature, stir regularly.
  6. When you get a golden crust, pour a small amount of warm water into the pan, close the lid and simmer for another 15 minutes.
  7. Following the mushrooms, send tomato slices, all sweet bell peppers to the pan.
  8. Season the contents of the pan with spices and nutmeg, simmer for another 20 minutes.
  9. Sort out and wash the parsley thoroughly. Wash all the cucumbers, peel them, and chop the pulp into mugs.
  10. Remove the finished stew for 20 minutes in a warm place, so that it infuses and cools down a little. Serve the dish cold in portioned plates, with the addition of your own sauce, cucumber circles and chopped herbs.
