In Spain this dish is called "Pisto". In many provinces, it is prepared only from vegetables. However, in Catalonia, in the east of the country, only the one in which there is jamon (jerky meat of a bull) is considered a real pisto.
It is necessary
- - jamon (200 g);
- - olive oil (100 g);
- - zucchini (4 pcs.);
- - eggplants (3 pcs.);
- - garlic (4 cloves);
- - onions (2 pcs.);
- - tomatoes (6 pcs.).
Instructions
Step 1
Take a deep saucepan and grease the bottom with a little olive oil. In this pan, we will add the ingredients fried in a pan.
Step 2
Fry chopped onions and garlic in olive oil in a pan until golden brown. Spoon the onion and garlic into the cooked saucepan.
Step 3
Peel the zucchini and eggplant. Fry the diced zucchini in a pan. Then - eggplant cubes. And finally - tomatoes, cut into slices.
Step 4
After frying, each vegetable is folded into a saucepan, creating a new layer. The last layer will be jamon, cut into thin longitudinal shreds. Before adding the ham, the contents of the pot are salted and peppery to taste.
Step 5
Cover the saucepan with a lid and put on a very slow heat. Simmer the stew for 20 minutes.
