Cod is a versatile fish that can be cooked in any form. If you cook fried Spanish cod for dinner or any occasion, your loved ones and guests will be pleasantly surprised by your culinary skills.

- - cod fillet 4 pcs. 200 g each;
- - butter 80 g;
- - jamon (can be replaced with other jerky) 100 g;
- - garlic 1 tooth;
- - shallots 1 pc.;
- - almond flour (or 5-6 almonds);
- - Dijon mustard 1/2 tsp;
- - lemon juice 2 tbsp;
- - parsley;
- - olive oil;
- - pepper;
- - salt.
Instructions
Step 1
Preheat oven to 200C. Chop the parsley, shallots and garlic. Chop the jamon very finely. Grind the almonds in a blender. Combine butter, mustard and lemon juice in a bowl. Add parsley, garlic, shallots, jamon and almond flour, a little pepper and salt.
Step 2
Heat olive oil in a skillet over medium heat. Season the cod fillets with salt and pepper and cook for 2 minutes on one side. Then turn over and fry for another 1 minute.
Step 3
Place 1 tablespoon of the butter mixture on each fillet and place the pan in the oven for 3-5 minutes, until the fillets are opaque in the center of the piece. Transfer fish to a platter and keep warm.
Step 4
Add the remaining oil mixture to the pan and stir with the juice from the pan, pour over the fish. Serve with lemon.
