Telnoe is a traditional Russian fish dish. A tasty dish can be prepared from affordable and inexpensive river fish - perch, pike, pike perch.
It is necessary
- For 6-8 servings
- - 700 g cod fillet;
- - 120 g of stale wheat bread;
- - 50 g lard;
- - 50 ml of milk;
- - 2 raw eggs;
- - 3 cool eggs;
- - 2 medium onions;
- - 4-5 porcini mushrooms;
- - 3 sprigs of parsley;
- - bread crumbs;
- - vegetable oil;
- - black pepper;
- - salt;
Instructions
Step 1
For the filling, put the porcini mushrooms in the freezer in advance and let thaw. Cut the defrosted mushrooms into medium pieces.
Step 2
Soak stale wheat bread in milk for 15 minutes. Cut the onion into half rings and fry in vegetable oil for 5 minutes.
Step 3
Add the mushrooms and continue to fry for about 5-7 minutes more. Remove from heat, cool to room temperature. Boil eggs, peel and cut into small cubes, mix with mushroom mass.
Step 4
Add chopped parsley, season with salt and pepper. Mix well. Remove the fillet from the fish, mince it along with the bacon.
Step 5
Add the soaked bread, then the egg, pre-beaten with salt until smooth. Mix thoroughly.
Step 6
Divide the minced meat into 6-8 parts, form a round cake from each. Place the mushroom filling on one half. Cover with the other half and mold the body well, giving each a crescent shape.
Step 7
Prepare the batter. In a bowl, beat the egg and salt until fluffy. Sprinkle the breadcrumbs on a large plate in an even thin layer.
Step 8
Dip each body into an egg, then into breading. Fry in vegetable oil until cooked and serve immediately with green peas and potatoes.
