Fried meat is usually garnished with potatoes, rice, or vegetables. Try to cook veal with fried eggs "royal" or, as it is also called, fried eggs in a royal way.

Step 1
A piece of veal from the back leg is best for this dish. To make the meat very soft, it should be poured with milk in the evening and refrigerated.

Just before frying, remove it from the milk, wipe it off with a towel, rub with salt, brush with butter and place on a baking sheet.

Place the baking sheet in a well-preheated oven and bake it, pouring over the resulting juice every 10 minutes. Pierce the veal with a fork 50-60 minutes after the start of frying. If it easily passes into the meat and the pink juice does not appear, then the veal is ready. Cover the whole piece with bread crumbs and keep the meat in the oven for a while to brown the bread.

Prepare fried eggs "piano". Shake the eggs to combine the white and yolk. Dilute spinach puree a little with broth, combine it with eggs. Salt and pepper the mass.
Step 5
Grease a saucepan with butter and pour the egg mixture into it. Pour water into a frying pan with a thick bottom, put a pan with egg mass in it and send everything to the oven to simmer over medium heat. During cooking, make sure that the water in the pan does not boil. The scrambled eggs should harden. you can check the readiness with a fork or knife. Stick them in the eggs, if the appliance remains clean, then the grand piano is ready.
Step 6
Remove the eggs from the oven and cool in the same water. Then dip the pan in hot water for a minute and turn it over onto the board. Cut into triangles.

Cut the veal into thin slices across the grain, place them in the middle of a large dish, and overlay the pieces of grand piano eggs around.
