It is enough to cook the kidneys once according to this recipe to dispel the myth of dubious taste.
It is necessary
- - calf kidney - 700 grams;
- - low-fat milk - 1 glass;
- - wheat flour - 20 grams;
- - chicken eggs - 2 pieces;
- - bread crumbs - 70 grams;
- - rendered fat - 2 tablespoons;
- - green oil - 90 grams;
- - half a lemon;
- - salt - according to preference.

Step 1
First you need to prepare the kidneys. To do this, cut off excess fat from them and remove all films. Then make an incision lengthwise, remove the ureter, rinse thoroughly in water and soak in cold milk for a couple of hours.
Step 2
At the next stage, the kidneys need to be removed from the milk, washed, salted and prepared. This will require three bowls. In the first of them, beat the chicken eggs with a fork, add flour in the second, and breadcrumbs in the third. Then, at first, do not roll each kidney too much in flour, then dip in beaten eggs and roll again, but in breadcrumbs. Repeat this for each kidney.
Step 3
Frying will take place on melted fat. Anyone will do, but pork is most often used. It can be purchased on the market, or you can melt it yourself from lard. Put the kidneys in a lezon in a skillet with heated fat and fry on each side for 5-7 minutes. Then preheat the oven to 120 degrees, move the frying pan into it and bring the kidneys to readiness.
Step 4
Garnish the buds with thinly sliced lemon and chunks of green butter before serving. It's easy to prepare. It is enough to finely chop the dill greens, soften the butter at room temperature and move everything thoroughly.
