Choosing a variety and producer of olives The main suppliers of olives and olives are Greece, Italy and Spain. However, you can find olives produced in Chile, Tunisia, Israel and Argentina. The most expensive variety of olives is the elite Greek olives marinated in olive oil. These varieties of olives are characterized by thick flesh, rich taste and small, easily separable pits.

Note the shelf life Conventionally prepared olives have a maximum shelf life of six months. If a longer shelf life is indicated on the container, it means that preservatives were used in the manufacture of olives, for example, lactic acid (E-270). These preservatives increase the shelf life up to 3 years, but can adversely affect the taste of the product.

We look at the container On sale there are olives both in tin containers and in glass. Tin containers are cheaper and do not let in sunlight. But glass allows you to visually assess the size of the olives. In addition, the glass does not react with the product. Please note: if the marinade is cloudy and completely opaque, the product is most likely of poor quality.

How to choose olives - we estimate the caliber If you have a high-quality product in front of you, the container must indicate the caliber - how many olives go per kilogram. The smaller the caliber, the larger the olives. The standard is from 80 olives to 320. Usually the maximum spread is indicated, for example 120/150. If the spread is too large, it means that the jar is pickled.

What color should the olives be Ripe olives that have naturally matured to black are not suitable for preservation. They are used to make olive oil. The black color of canned olives is obtained as a result of pretreatment. However, do not be intimidated by the unusual shade of olives. Depending on the variety, the degree of maturity and the place of growth, the color of the olives varies from pinkish to dark purple.

The price of the issue When choosing olives, try not to skimp. High-quality fruits are harvested by hand, the process of their preparation takes a long time, so olives prepared according to the traditional recipe cannot be cheap.
