Seabass, or sea wolf, is very popular in the Mediterranean countries. It is baked in the oven, fried on the grill, stewed in a double boiler. The process of cooking this fish does not require a lot of time and even a novice cook can handle it. However, one should take into account the fact that the sea bass has a rather delicate taste, which is important not to interrupt or spoil with a large amount of spices and herbs.
It is necessary
1 carcass of sea bass; - 1/2 lemon; - parsley; - 2 cloves of garlic; - 50 g butter; - 80 g of olive oil; - basil, oregano, thyme, white pepper to taste; - salt to taste. For the sauce: - 1 tomato; - 1 cucumber; - 1 head of red onion; - 1 tsp dijon mustard; - 4 tsp soy sauce; - salt, pepper to taste
Instructions
Step 1
Take a carcass of a sea bass fish, rinse in cool running water. If it is not gutted, remove scales, fins, tail, head, gills and entrails. Rinse thoroughly but gently again in cool running water. Let the excess liquid drain and pat dry with a paper towel. Set aside in a bowl and sprinkle with lemon juice on all sides. Rub with salt.
Step 2
To prepare the filling for the fish, peel the garlic. Rinse parsley, lemon and peeled garlic in running water. Allow excess liquid to drain. Finely chop the garlic and parsley. Gently remove the zest from the lemon so as not to hurt your fingers with a fine grater. Mix the resulting ingredients in a small bowl. Add a couple of tablespoons of olive oil, basil, oregano, thyme and white pepper. Stir. Stuff the sea bass carcass along its entire length with the prepared mixture.
Step 3
Heat butter and olive oil in a grill pan. Arrange the fish and fry on both sides until cooked through. Try to fry the carcass of the sea bass diagonally from the edges in the grill pan. Thus, the finished fish will have a beautiful toasted ornament.
Step 4
To prepare the sauce for fish in cool running water, wash the tomato, cucumber, peeled red onion. Place the tomato in a small, deep bowl. Pour boiling water over and peel. Cut the tomato into small cubes. Chop the cucumber and red onion into small cubes too. Separately, in a bowl, combine the crushed ingredients, Dijon mustard, soy sauce, salt and pepper. Mix thoroughly.
Step 5
Place the cooked seabass on a serving platter. Top with sauce. Serve with mashed potatoes or oven baked potatoes, grilled vegetables and dry white wine.
