Pork gravy with tomato sauce

Ingredients:

- 500 g of pork;

- 1 onion;

- 1 carrot;

- 1 tbsp. tomato paste or ketchup;

- 2 tbsp. flour;

- 0.5 liters of water;

- Bay leaf;

- 5 black peppercorns;

- 15 g of parsley;

- salt;

- vegetable oil.

For stewing, in principle, any part of pork is suitable, but it is best to cook a gravy from a ham or shoulder, this meat is leaner.

Wash the pork and pat dry by blotting the piece with a paper towel. Cut it into medium cubes. Peel the onion and cut the rings into thin quarters, coarsely grate the carrots. Heat vegetable oil in a deep skillet or large skillet and fry the meat in it on all sides until golden brown, stirring constantly with a wooden spatula. Transfer the vegetables to it, stir and simmer over medium heat for 3-5 minutes.

Add tomato paste or ketchup to the cooking fry and add flour. Boil water and pour it into a skillet. Dip there the bay leaf, peppercorns, reduce the temperature to the very minimum and simmer the dish for half an hour, not forgetting to stir periodically so as not to burn. Season with salt to taste 5 minutes before cooking and stir in the chopped herbs. Let the gravy sit for 10-15 minutes, while cooking your favorite side dish.

Creamy pork sauce with mushrooms

Ingredients:

- 500 g of pork;

- 200 g of champignons;

- 1 onion;

- 1 tbsp. 20% cream;

- 1 tbsp. milk;

- 3 tbsp. flour;

- 3 tbsp. butter;

- vegetable oil;

- 0.5 tsp each ground paprika and black pepper;

- salt.

Prepare the pork and cut it into small cubes. Fry them in well-heated vegetable oil over medium heat until they turn gray, put them on a plate and set aside for now. Remove the husk from the onion and chop it finely. Pour more oil into the skillet and fry the onion in it until almost transparent, then add the mushroom slices to it for 5 minutes.

Milk can be replaced with vegetable or mushroom broth.

Melt the butter in a saucepan or small saucepan. Fry the flour on it until brown and gently dilute it with a mixture of cream and milk, seasoned with paprika and black pepper, pouring it in a thin stream and stirring immediately. As soon as the sauce is smooth and thick, add the meat and mushrooms in it, salt everything, cover the dishes and cook the creamy pork gravy for 15 minutes.
