Step 1

Make two beef and lamb mince. Mix them, season with salt, pepper, add chopped parsley. Send it to the refrigerator.

Remove the tails from the eggplant, cut lengthwise into circles no more than 1 cm wide. To remove the bitterness, put the slices in a large bowl, season with plenty of salt, fill with water.

Stir to dissolve the salt, place a plate on top, submerging the eggplants in water. Leave it on for 15-20 minutes. Prepare your vegetables. Chop the peppers, tomatoes, cabbage and onions into small strips.

If desired, fry the vegetables in vegetable oil or leave fresh. Drain the darkened water from the eggplant, rinse under running water. Place in a colander, wait for the water to drain.

Make 6 small balls out of minced meat, connect them with eggplant slices and pierce the kebab with a skewer or wooden skewer. Place the dish in an oven preheated to 180 ° C for 20 minutes.
