Cabbage pies and pies are one of the most popular and favorite dishes of Russian cuisine. Fragrant, with a golden brown crust and delicate filling, which can be prepared according to different recipes.
Filling for cabbage and egg pies
The cabbage filling prepared according to this recipe has a pleasant white color and excellent taste. For its preparation, the following components will be needed:
- 3 kg of cabbage;
- 3 large onions;
- 5 boiled eggs;
- 100 g of butter;
- 3 tbsp. vegetable oil;
- a pinch of sugar;
- salt to taste;
- ground pepper to taste;
- a bunch of fresh dill;
- a bunch of green onions.
Chop the cabbage into thin strips 2-3 cm long, cut the onions into thin half rings. Heat vegetable oil in a deep saucepan, put onion in it, sprinkle with sugar, lightly salt and simmer over low heat until transparent.
Pour the cabbage with boiling water, bring to a boil and cook for 5-7 minutes, then transfer it to a colander and rinse with cold water. Squeeze the boiled cabbage lightly and transfer to a saucepan with onions, add the diced butter and wait to dissolve. After that, turn off the heat, cool the filling and season it with chopped herbs, ground pepper and diced eggs.
Cabbage filling with mushrooms
Fragrant pies are made with cabbage and mushroom filling. To cook it, you will need:
- 350 g of cabbage;
- 2 small onions;
- 250 g of champignons;
- 2 medium carrots;
- salt to taste;
- ground pepper to taste;
- 2 tbsp. sunflower oil.
Peel and finely chop the onions, chop the cabbage thinly, grate the carrots on a coarse grater, cut the mushrooms into thin slices. Stew the cabbage with 1 tbsp. butter over low heat until soft, then salt and pepper and transfer to a plate.
Heat the remaining oil in a frying pan and fry the mushrooms on it, when liquid begins to stand out from them, reduce the heat and simmer until it evaporates. Then put the carrots and onions in the pan and keep for another 5 minutes. After that, mix the fried mushrooms with cabbage, cool and use as directed.
Filling for chicken and cabbage pies
A good filling is made from cabbage with chicken. To prepare it, you will need the following ingredients:
- 500 g of cabbage;
- 300 g chicken fillet;
- 2 medium onions;
- salt to taste;
- vegetable oil;
- ground pepper to taste.
Wash and dry the chicken meat with paper towels, chop it into pieces, salt and pepper. Heat oil in a skillet and fry the chicken in it until golden brown. Remove the fried fillets from the pan and leave to cool.
Cut the onion into half rings and fry it in the oil left over from the chicken. Chop the cabbage, scald it with boiling water, salt, pepper and simmer it with onions under the lid until tender. Combine the stewed cabbage and chicken in a separate container.
