Chicken breast roll is one of the original dishes that does not require special cooking skills. At the same time, the possibility of using a variety of fillings allows you to get new tastes every time.
What is required to prepare a dish according to this recipe:
- 2 chicken breasts with a total weight of more than a kilogram;
- 50 g cream of any fat content;
- 100 g of bacon;
- salt, black pepper;
- cooking foil, twine or strong thread.
The larger the breasts, the wider fillet layers are obtained from them and the easier it is to wrap the filling in them, and the roll itself comes out larger.
Filling options
Inside you can put:
- pitted prunes, pre-soaked in water and crushed;
- fried champignons with onions;
- any pickled mushrooms from which the marinade has been previously stacked;
- several varieties of cheese, among which there may be both hard and soft, garlic and herbs passed through a press.
The filling should be smooth enough and not too coarse to wrap easily in the meat.
The cheese goes well with any type of roll inside and acts as a binding element to make it juicier.
How to make chicken breast roll
Chicken breasts must be washed, dried, fillets cut into large layers, cutting out the ridge. If you want a less nutritious meal, you can also remove the skin during the cutting process. Then the fillets should be beaten off to give softness and laid out on foil so that the edges overlap each other, forming a single layer of meat.
In principle, for this dish, ready-made fillet can be used with the same success, but in this case it is worth picking up larger pieces, since it is inconvenient to wrap the filling in small ones. Salt the meat, add the spices used, put thin layers of bacon on it in one layer, pour with cream. These ingredients are not essential, but they will add juiciness to the dish as the chicken breast itself is a little dry.
On top of the bacon, carefully lay out the selected filling, which can be added both to the center of the layer, if there is not too much of it, and over the entire area of the meat. Then you should twist the meat with a roll, tie it with twine on top so that the shape is preserved during the baking process, wrap it in foil and put it in a preheated oven for 40 minutes, baking the meat at a temperature of 180 ° C.
If you want the dish to turn out not only soft on the inside, but also to have a crust on the outside, then 10 minutes before the end of cooking, you must carefully open the foil and push it from the center to the edges, freeing the upper part of the roll for baking. Before serving, the twine must be removed from the roll, and the meat itself must be cut into portions.
