Cilantro has many names and many virtues. In addition to the fact that these greens are rich in vitamins, it effectively aids digestion and kills harmful bacteria in the digestive tract. That is why it is simply necessary to use it in heavy or too spicy dishes. Take a short culinary trip to other countries and prepare Hungarian salad, Georgian soup or Thai chicken pancakes with cilantro.
Hungarian cilantro salad
Ingredients:
- 100 g of cilantro;
- 400 g of canned white beans (400 g);
- 200 g feta cheese;
- 2 tomatoes;
- 1 red pepper;
- 1 head of red onion;
- 1 small head of garlic;
- 1 tbsp. grape or apple cider vinegar;
- 1/3 Art. olive or vegetable oil;
- 1/4 tsp ground black pepper;
- salt.
You can use boiled beans instead of canned beans. Soak it in cold water overnight, and in the morning cook for 1-1.5 hours until tender.
Drain the beans in a colander, drain the liquid, and transfer the beans to a deep bowl. Peel the onion, cut it into thin rings, sprinkle with vinegar and lightly rub with your hands. Cut out the stem and seeds from the pepper and cut it into strips. Wash the cilantro (coriander), pat dry on a paper towel and chop finely. Crush the garlic in a special press. Cut the tomatoes into halves and then thin longitudinal slices. Transfer all prepared ingredients to the beans, drizzle with oil, sprinkle with salt and pepper and stir gently. Chop the feta into cubes and place on top of the vegetables. Evaluate in this salad not only the benefits of cilantro, but also vitamin red onions.
Georgian soup with cilantro
Ingredients:
- 1 large chicken leg;
- 1.5 liters of water;
- 1 potato;
- 0.5 carrots;
- 1 small onion;
- 4 cloves of garlic;
- a pinch of hot red pepper;
- salt;
- 20 g butter.
Pour the chicken leg with water in a medium saucepan and heat over high. Bring the liquid to a boil and cook the chicken for 40-45 minutes at medium heat, from time to time skimming off the resulting fatty foam with a slotted spoon. Peel and chop vegetables: carrots and onions - into cubes, potatoes - into strips. Put them in the broth, after removing the meat from there, for 20 minutes.
Crush or grate the garlic, chop the cilantro and toss in the soup. Season it with salt to taste and remove from the stove. Eat a flavorful dish by pouring it into plates and adding a lump of butter to each dish.
Thai chicken pancakes with cilantro
Ingredients:
- 600 g chicken fillet;
- 80-100 g of cilantro;
- 40 g of mint;
- 1 stalk of young garlic;
- 1 small chili pepper;
- 2 tbsp. soy sauce;
- 2 tsp sesame oil;
- 1/3 tsp salt;
- vegetable oil.
The stalk of garlic can be replaced with 3 cloves, and instead of fresh chili, take dried.
Rotate the chicken fillet in a meat grinder. Chop the stalk of the garlic, the cilantro and mint leaves, and the seed-freed chili very finely. Combine all the mince ingredients in one bowl, mix with soy sauce and sesame oil, salt and mix well, preferably with your hands. Heat the vegetable oil and fry the pancakes, adding a tablespoon.
