Consomé is a French cuisine dish. This is a clarified strong broth with the addition of various spices. In classic cuisine, this is usually beef or chicken broth, but restaurants in the world have gone much further - they offer consomme of vegetables and fruits, dietary, light broths or even wine broth.
Consommé with onion tartlets
Ingredients:
- 400 g of beef;
- 1 onion, 1 carrot, parsley root;
- 1 inflorescence of dried dill;
- salt, fresh parsley.
For tartlets:
- 4 slices of bread;
- 2 onions;
- 4 olives;
- 2 tbsp. tablespoons of vegetable oil;
- 4 teaspoons of shabby cheese;
- black pepper, salt.
Rinse a piece of beef, cover with cold water, put on high heat. Wait for the water to boil, remove the foam, reduce the heat, cook, not allowing a strong boil. After 15 minutes, add the onion, carrot, parsley root, and dried dill to the broth. Season with salt and pepper.
Peel the onion for the tartlets, cut into thin rings. Heat oil in a skillet, add onion, fry until soft over low heat, salt and pepper to taste.
Put slices of bread on a baking sheet, cover with onion rings, sprinkle with grated cheese, put olive on top. Grill over high heat in the oven.
Strain the broth, pour into bowls, sprinkle with parsley. Serve with tartlets.
Consommé with white wine
Ingredients:
- 0.5 liters of water;
- 0.5 liters of dry white wine;
- 100 g onions;
- a bunch of fresh herbs;
- black peppercorns, salt.
Peel the onion, cut into half rings. Put in a saucepan, pour in wine and water, put spicy herbs, salt and pepper. Cook for 40 minutes, uncovered. Then pass through a sieve. The consommé with white wine is ready, this dish can also be served with onion tartlets.
