Vegetable salad with chicken curry can replace a full meal by combining two dishes - crispy chicken and vegetables. The colorful appearance and rich taste of the dish will surely please all members of your family and guests.

- - 250 g chicken fillet
- - 8 cherry tomatoes

- - 70 g bread crumbs
- - 1 bell pepper
- - 1 head of red onion
- - 30 g arugula
- - 1 tsp mustard
- - olive oil

- - 1 fresh or pickled cucumber

- - ground paprika

Instructions
Step 1
Fry the chicken fillet until half cooked in vegetable or olive oil. Cut the meat into small cubes, dip in breadcrumbs and fry again until golden brown.
Step 2
In a separate bowl, combine a few tablespoons of olive oil, hazel, paprika and black pepper. Mix everything thoroughly. The number of ingredients can be selected at your discretion. Pour the chicken fillet with the resulting mixture a few minutes until tender.
Step 3
Cut the red onion into thin half rings, chop the bell pepper and cucumber into strips. Cherry tomatoes can be left whole or cut in half.
Step 4
Put lettuce leaves, onion, cucumber and pepper, previously torn by hands, on a plate. Arrange the curry chicken and cherry tomatoes. Additionally, you can season the salad with olive oil or any sauce.
Step 5
As a dressing, you can prepare an original mixture of one teaspoon of mustard, several tablespoons of olive oil and the juice of half a lemon. This addition will add extra piquancy to the dish.
