- 6 eggs;
- 220 g flour;
- 200-250 g of sugar;
- salt on the tip of the knife.
For the cream, take:
- 300 g butter;
- 1 can of sweetened condensed milk;
- 70 g of nuts.
The eggs should be refrigerated for the whites to beat well. Get them out of there. Separate the whites from the yolks. To do this, you can use a special device that looks like a deep spoon with slots on the sides. Drive an egg into it, the protein will drain through the holes. Place the yolk in another container.
When all the eggs are processed in this way, put the whites back in a cold place, and beat the yolks with sugar. Since there will be sweet mastic on the cake, sugar can be put not 250, but 200 g.
Add flour to the yolks. Mix everything. Turn on the oven, and in the meantime, beat the whites, adding a little salt. First put a small portion in the dough, mix. Then place the remaining protein cloud and stir the mixture gently.
How to bake and prepare cakes correctly
You will need a deep baking sheet to turn the dough into a passport cake. Brush it with a piece of margarine or butter, pour in the dough. Bake at 180 C for 40-45 minutes. When the match, which has pierced the center of the cake, remains dry and the top of the dough is browned, take out the baked goods.
Cut it without hesitation. With a sharp knife, divide in half, making 2 rectangles of the same shape. Divide each into 2 parts horizontally, so that then lay them with cream.
Wait for the cake to cool. Turn the cakes over so that the bottom is on top. Place a rectangle the same size as the cakes on the entire stack. It can be a large wooden board, a tray. Place a weight of 500-700 g on top. Leave the structure in this form for 40 minutes. This will help the passport-like cake to be flat. It is easier to cover it with mastic.
Prepare the cream at this time. Add softened butter to condensed milk, beat, add nuts, mix well. Assemble the product. Layer 4 cakes with cream, place one on top of the other.
The mastic will turn the cake into a document
Make some mastic. For her, take:
- 200 g of chewing marshmallow candies of white color;
- 300 g of icing sugar;
- 100 g of butter;
- food colorings.
Melt the candy and butter in the microwave for 4-5 minutes. Remove, pour sifted powder into the hot mass. Substitute for sweet dough. Take 2/3 pieces. Put the rest in a bag and close it tightly. Dip a toothpick in scarlet dye, make 6-8 punctures in the selected piece of mastic. Knead it, roll it out with a rolling pin into a thin rectangle. Lay on the cake, wrap around the top and left edge of the sweet document. Cut off the excess.
Take a third of the remaining mastic. Roll it out in the form of a strip, wrap it around 3 sides of the cake. These are pages.
You will need a printer to create the coat of arms and letters. Print on it an enlarged copy of the cover of this passport, put it in a file. In this case, print the drawing of the coat of arms and letters separately. Lubricate the top of the file with a very small amount of odorless vegetable oil. Add gold dye to the remaining mastic. If it is thick, pour in a few drops of water, stir. Place in a pastry syringe. Squeeze the mass out of it with a thin stream and cover all the contours of the coat of arms, then the letters. Leave the creations to dry on a flat surface for 3 hours. After that, gently pry with a pastry spatula, transfer to the cake. Attach to it with water, slightly moistening the part of the passport cover with it, where the coat of arms and letters will lie.
