Profiteroles are tender and airy buns that are filled with various fillings and topped with melted chocolate. In this recipe, the profiteroles are filled with ice cream and topped with toffee sauce.
Ingredients for the dough:
- Eggs - 4 pcs;
- Water - 200 g;
- Flour - 150 g;
- Butter 120 g.
Ingredients for toffee sauce:
- Powdered sugar - 350 g;
- Whipped cream - 400 g;
- Light fruit syrup - 2 tablespoons;
- Cocoa powder - 3 teaspoons;
- Soft butter - 20 g;
- Vanilla sugar - 5 g.
Preparation:
- To bake profiteroles, you need to put the oven at 200 degrees and leave to warm up. Grease the surface of the baking sheet with a tablespoon of butter.
- Prepare a dough for profiteroles. Bring the water to a boil, put in the water 100 g of butter softened with a fork. Pour sifted flour into the mixture. Stir the mixture with quick movements. The mass should be well behind the sides of the bowl. Remove the mixture from heat and stir continuously for a couple of minutes. Then cool the dough mixture and add eggs to it. Stir the dough.
- Place dough in a cooking bag and squeeze 35 small rolls onto a greased baking sheet. Bake the buns in the middle of the oven for about 10 minutes. The bun dough should rise, double, and brown.
- Now you need to cook the toffee. Combine sugar, cream and cocoa powder in a saucepan. Pour the syrup into the mixture. Bring the toffee mixture to a boil, stirring the sauce without stopping. Reduce the fire to the smallest. Then cook the sauce for another 20 minutes. The toffee sauce should turn slightly golden in color and thicken.
- Remove the saucepan from the heat. Combine the resulting sauce with butter, stir. Add vanilla sugar to taste. While the sauce is cooling, stir it.
- Make cuts in the resulting buns and fill them with ice cream. Place the profiteroles on a serving plate in the form of a slide. Pour the toffee sauce over the pyramid.
