Do you like lard? Try making it at home. The recipe is simple, but the bacon turns out to be very tasty, the main thing is to resist and not eat it immediately after cooking.
It is necessary
- - 1 kg of lard,
- - 7 cloves of garlic,
- - 60 grams of salt,
- - 2 teaspoons of a mixture of ground peppers,
- - 5 bay leaves,
- - 2, 5 tablespoons of soy sauce.
Instructions
Step 1
Combine salt with a mixture of ground peppers and some broken bay leaves. Add the garlic cloves passed through a press and stir.
Step 2
Add 2.5 tablespoons of soy sauce to the resulting mass (you can replace it with vegetable or sunflower oil). Stir well, you should get a pasty mass.
Step 3
Divide the bacon into portions. Brush each piece with marinade. Place the bacon in any convenient container, cover with plastic wrap and refrigerate for three days.
Step 4
After three days, remove the bacon and remove the marinade from each piece. Make punctures and attach to a sturdy rope. Hang lard for a day. Wrap the bacon with gauze to protect it from possible insects, such as flies (if any).
Step 5
Make a fire and wait for the wood to burn out.
Step 6
Soak oak chips with alder sawdust in advance. Place them in the smoker for a resinous aroma and appetizing lard color. Pour sand into the pan and place it on the wire rack (sand is needed to absorb grease). Then place the lard grates. Pieces of bacon should be placed skin side up.
Step 7
Put the smoker on fire, close, add water and wait until it boils. Wait about 40 minutes. If there is a lot of meat on the pieces of bacon, then it takes 60-80 minutes to cook.
Step 8
Transfer the finished bacon to a dish, let it cool, then you can serve it on the table.
