Lightly salted red fish, and especially salmon, is one of the most popular snacks on the New Year's table. Salted salmon, cooked at home, is much tastier than purchased counterparts. It can be incorporated into a variety of New Year's salads, sandwiches, canapés and tartlets.
Ingredients for making lightly salted salmon:
- 300 grams of fresh or thawed salmon (optionally, you can replace it with salmon);
- 3 teaspoons of soy sauce;
- juice from half a lemon;
- salt (ordinary or sea, to taste).
Cooking lightly salted salmon for the New Year:
1. For salting, you need to separate a whole piece of salmon from the carcass or buy a ready-made part of fish weighing about 300 grams.
2. For salmon, you need to prepare a brine: mix lemon juice with soy sauce and add any salt to taste. Stir in the salt to dissolve well.
3. Put a piece of fish in a deep bowl or plate and pour over the prepared brine. Leave for about 25 minutes, sometimes turning the salmon.
4. Next, you need to take a tight bag (for example, a freezer bag) and put the fish in it. Pour the brine remaining in the plate there.
5. The bag with fish and brine should be tightly twisted and the ends of the bag must be secured with a clothespin or paper clips. It is important to ensure that the brine does not leak out of the bag.
6. A bag of fish should be put in the refrigerator for salting for 2-3 days.
After the specified period, tasty salted salmon can be served on the New Year's table, or used to prepare festive dishes.
