Step 1

Stir salt and sugar in cold water until completely dissolved. Pour the resulting solution into flour and butter and quickly knead the dough. Cover the resulting dough with a damp towel and refrigerate for at least 1 hour. If possible, you can leave the dough in the refrigerator overnight.

Remove the cooled dough from the refrigerator. Sprinkle a little flour on the work surface to prevent the dough from sticking. Use a rolling pin to roll out the dough to a thickness of 1 cm, giving it the shape of a rectangle. Fold the dough in 2 times and roll it out again to its original size. Refrigerate the dough for 10-15 minutes.

Step 5

Remove the dough from the refrigerator. Fold the dough in 2 times again and roll it out to its original size. This procedure can be repeated up to 6 times. From the resulting dough, you can immediately start baking, or you can leave it for storage in the freezer.
