Samsa with meat, cooked in tandoor, has a rounded shape. At home, it is easier to bake triangular pies. The recipes for the dish are quite varied, since they use choux, puff and unleavened dough.

Making choux pastry for samsa

Sifted wheat flour is mixed with a pinch of salt. Then boiling water is poured into the flour in a thin stream, kneading a sufficiently elastic dough that does not stick to the hands.

The butter is melted in a water bath. Sprinkle the table with flour and roll out the dough in a thin layer. The surface of the layer is smeared with melted butter. Next, the cake is folded in half, greased with oil again and rolled out. This procedure is repeated several times. It is important not to overdo it with butter, you need to grease the dough carefully. Otherwise, the oil will literally seep out.

The last time the dough is rolled out, giving it the shape of a small rectangle. After that, the dough is sent to the refrigerator for 1-1.5 hours and the minced meat is started.

How to cook minced meat for samsa

Finely chop the onions, sprinkle with salt and squeeze until juice appears. Finely chop fresh parsley. The beef is cut into small pieces and passed through a meat grinder twice.

All ingredients are thoroughly mixed by adding a little water, salt and black ground pepper. The minced meat should be juicy enough, but not liquid.

Samsa with meat recipe

Flour the table and roll out the dough. You should get a cake with a thickness of 2-3 mm. The surface of the cake is again greased with melted butter. The dough is rolled up.

The resulting roll is cut into pieces, 2-2.5 cm wide. Each piece is placed with the end down and lightly pressed by hand. Then the pieces are rolled out, trying to get circles of the correct shape, up to 0.5 cm thick.

The minced meat is spread in the middle of the cakes and their edges are firmly pinched, forming triangular cakes. A baking sheet is greased with vegetable oil and samsa is transferred to it. It is advisable to grease the top of the pies with whipped egg yolk and sprinkle with sesame seeds.

The baking sheet is sent to the oven heated to 200 ° C. Cooking samsa with meat in the oven will take about 35 minutes. After that, turn off the oven and leave the pies to brown.
