Pancake kurnik is a classic Russian dish. Both children and adults like it. This is a very tasty and nutritious dish, it can be served both for a festive table and for an ordinary family dinner.
Pancake kurnik in Russia was considered a festive dish, it was not cooked for every day. Oilseed week or autumn harvest festival, wedding - that's the main time to indulge yourself with a tender pie with chicken pulp, mushrooms and, of course, pancake dough.
The process of its preparation is divided into several stages, each of which takes considerable time. Therefore, the hostess often cooked kurnik with her daughters, who learned the basics of cooking this ritual dish from childhood.
To prepare a chicken coop we need:
- Pancakes according to any recipe
- Chicken mince - 300 g
- Onions - 1-2 pcs.
- Carrots - 1 pc.
- Rice - 0.5 cups
- Mushrooms - 300 g
- Greens
For the sauce:
- Butter - 2 tbsp. spoons
- Flour - 1 tbsp. the spoon
- Chicken broth - 2 cups
- Cream - 0.5 cups
For greasing the yolk - 1 pc.
Preparation
While baking pancakes, leave 2-3 tbsp. tablespoons of dough, add flour to them until the consistency of a tough dough for pies. From it we will make a "cover" for our kurnik.

Finely chop the mushrooms and onion and fry.
- Boil the rice until tender. Add carrots, grated on a coarse grater, and finely chopped greens. Mix well.
- Fry the minced chicken in vegetable oil.
Making the sauce
1 tbsp. Grind a spoonful of butter with flour, pour in broth and cream. Stir well until smooth and put on low heat, stirring until thickened (until sour cream).
We collect the chicken:
- Put 2 pancakes on the bottom of the tall form, brush with sauce.
- Next, alternate pancake - mushrooms - pancake - rice - pancake - meat until the ingredients run out. Grease each layer with sauce.
- Roll out the remnants of the pancake dough into a circle 0.5 cm thick and cover the chicken with it. Tuck the edges of the dough inward.
- Grease the chicken with an egg and place in the oven at 180 degrees for 25-30 minutes.
- The pancake chicken is ready!
