This custard Easter cake with candied fruit rises beautifully. It turns out to be lush and delicious. The recipe is suitable even for those housewives who are going to bake Easter cake for the first time.
It is necessary
- Flour - 4 cups
- Milk - 2/3 cup
- Yeast - 80 g (live)
- Egg - 8 pcs.
- Sugar - 200 g
- Butter - 100 g
- Candied fruits - 1/2 cup
Instructions
Step 1
First, we make a dough. Boil the milk and add 1/2 cup flour into it. Stir until smooth and cool. We dilute the yeast in 2 tablespoons of warm milk and pour into the cooled mixture. We knead well. The dough should be thick. We put it in a warm place. After about an hour, the dough will do. Add to it egg yolks, pounded white with sugar, stir until smooth, and then add the whites, whipped into foam. Mix again and leave so that the dough rises again, about 40-50 minutes.
Step 2
Pour melted butter into the dough that has come up a second time and pour in the remaining flour. Mix well, add raisins or candied fruits. If the eggs were very large, then you will need to add a little more flour 2-3 tablespoons.
Step 3
We shift the dough into a mold and let it rise (30-40 minutes). You need to fill the molds by 1/3, as the dough rises very well. Turn on the oven 180 degrees. The molds are carefully placed in the oven without hitting or knocking. We bake for 20-25 minutes. Watch out for the shade of the Easter cake. A light custard Easter cake is slightly tastier than a dark one. When the cake is ready, we turn off the oven and do not take it out, but only slightly open the oven door, since the cake may fall off from a sharp temperature drop.
Step 4
After a few minutes, we take out the cakes from the oven and carefully place them in molds on a flat surface. We do not take the cake out of the mold until it cools down, as it may fall off and the appearance will not be so beautiful. Remove the cooled cake from the mold and decorate.
