To prepare the dough for simple pancakes, use: 1 egg, 1 glass of water, 1 glass of flour, 1 tablespoon of vegetable oil, 1 tablespoon of sugar, a pinch of salt. Pancakes on water are a less high-calorie dish than pancakes on sour cream or milk, and they turn out to be thin and rather tender.
The first step is to grind the eggs with sugar and salt. Then add a glass of flour and beat with a whisk or mixer. Water is poured into the resulting mixture and vegetable oil is added and also whipped until smooth. If the dough is too thick and does not pour out of the spoon, then add more water.
It is necessary to fry pancakes in a preheated frying pan, greased with oil. Pour the dough with a ladle so that it spreads over the entire surface of the pan in a thin layer. Pancakes on each side are fried for one minute, until they are lightly browned.
Secrets of making dough and frying pancakes
To make the pancakes thinner and crisper, when preparing the dough, you can beat the whites and yolks separately and only then start kneading the dough.
It is important that the prepared dough is not too thick and not too liquid, so during its preparation it is better not to pour out the water immediately, but add it gradually. If the dough turns out to be too liquid, then you will have to add a little flour to it. It is better not to pour the prepared dough into the pan right away, but close it with a lid and let it stand for at least 30 minutes.
In the process of frying pancakes, the dough must be stirred periodically so that it does not settle and has a uniform consistency. Make sure that the heat is not too strong so that the dough does not begin to set as soon as it is poured into the pan. To prevent pancakes from burning, it is better to use a cast iron pan with low sides or a pan with a non-stick coating and a thick bottom. Also, before cooking, the pan must be dried well, then ignited, and during frying pancakes, do not pour vegetable oil into the pan, but grease it with a culinary brush or half an onion in vegetable oil, strung on a fork.
When the dough gets into the pan, it must be tilted from side to side so that it is evenly distributed over the entire surface. It is better to turn the pancake with a wide knife or a thin spatula. And to put the pancake on a plate, you can simply turn the pan over it.
