Step 2

Cut the peels of the oranges into small wedges and place in a thin-bottomed saucepan. Pour the crusts with water (in an arbitrary proportion) and bring to a boil, then reduce the heat and simmer for about 10 minutes more.

Drain and pour over the orange peels again with cold water, bring to a boil again and simmer for 5 minutes, then drain the water. This will help remove any bitterness from the peel.
