Products:

Take pickles, cut them into small cubes. Wash the onion feathers, chop thoroughly. Boil eggs and potatoes, then cut them into small cubes. Then cut the brisket into small pieces. Transfer the resulting components to a plate, add mayonnaise, sprinkle a little with salt, mix everything well.

Salad "Olivier with chicken"

Products:

- 4 things. fresh potatoes;

- 5 pieces. eggs;

- 1, 5 cans of green peas;

- 330 g fresh chicken fillet;

- 320 g of crab meat;

- 2 pickled cucumbers;

- 2 fresh cucumbers;

- 5 tbsp. sour cream;

- a little dill, sweet basil and green onions.

Products for making mayonnaise:

- 3 chicken yolks;

- 2 tbsp. l. olive oil, - half a fragrant lemon (you need its juice);

- 1, 5 tbsp. dijon mustard;

- salt, pepper according to your taste.

Wash the chicken fillet, boil it until cooked. Next, boil hard-boiled chicken eggs, then cool them, peel, cut into small pieces. Boil the potatoes in their skins, then peel them and cut them into small cubes. Finely chop the pickled and fresh cucumbers. Cut the crab meat into pieces. Rinse the greens and chop gently.

Get busy making mayonnaise for your salad. Pour three yolks into a bowl, add salt, beat a little. Then add olive oil, add Dijon mustard, add pepper. Now squeeze the lemon juice into it. Mix everything thoroughly until smooth.

Then mix all the chopped ingredients in a saucepan with ready-made mayonnaise, add green peas. Next, in a separate plate, mix sour cream and mayonnaise, season the salad with the resulting sauce.

Olivier with meat salad

Products:

- 5 pieces. eggs;

- 120 g of capers;

- 5 pieces. fresh potatoes;

- 320 g of beef;

- 2 juicy carrots;

- 2 heads of onions;

- 1, 5 cans of green peas;

- 70 g fresh green onions;

- half a ripe lemon, you need its juice;

Products for mayonnaise:

- 3 tbsp. olive oil;

- 3 chicken yolks;

- 1, 5 tbsp. vinegar;

- 2 tbsp. mustard;

- pepper, salt according to your taste.

Boil the potatoes in their "uniform", boil the carrots and eggs. Next, peel the finished potatoes and eggs. Cut them into medium cubes, and cut the carrots into medium slices. Pepper and salt the beef, then bake in the oven at about 180 degrees. Cut it into pieces. Marinate the onions in lemon juice for about 35 minutes, then cut them into half rings. Then rinse the green onions and chop them gently.

Prepare mayonnaise. In a separate bowl, combine the oil, vinegar, and yolks. Mix everything thoroughly until smooth, then add salt and pepper there. Mix everything again.

Combine capers, green peas and all chopped ingredients except beef in a deep bowl. Then season the prepared salad with the resulting mayonnaise. The dish is ready. Top the salad with slices of cooked beef.
