Khinkali is a traditional Caucasian dish. It is believed that cooking them according to all the rules is a great art. Khinkali is usually served with a lot of herbs and various sauces (tomato, garlic and sour cream).
Tomato sauce
To make tomato sauce for khinkali you will need:
- 1 kg of tomatoes;
- 2 tbsp. l. Sahara;
- 1 head of onion;
- 1 clove of garlic;
- basil;
- salt.
Wash the tomatoes in cold water, then pour over boiling water and peel them off. Then chop finely. Peel the onions and garlic, chop with a knife and add to the tomatoes. Transfer everything to a saucepan, add sugar, salt, season with basil, mix well and simmer over low heat for 30 minutes. Then wipe the resulting mass through a sieve and serve the prepared tomato sauce to the khinkali.
Garlic Sause
To make garlic sauce you will need:
- 100 ml of tomato juice;
- 50 ml of vegetable oil;
- 50 ml lemon juice;
- 3 cloves of garlic;
- 1 tbsp. l. Sahara;
- salt;
- pepper.
Peel the garlic cloves, chop with a knife or pass through a press and mash with sugar, salt and ground pepper. Then dilute with tomato juice, add vegetable oil and freshly squeezed lemon juice. Mix everything thoroughly.
Hot sauce with herbs
To prepare a spicy Georgian sauce for khinkali, you must take:
- 500 g of canned tomatoes in their own juice;
- 2 cloves of garlic;
- 50 g of cilantro;
- 50 g of dill greens;
- 1 tbsp. l. hops-suneli;
- 1 tbsp. l. coriander;
- ¼ h. L. hot capsicum;
- ground red pepper;
- ½ tsp. Sahara;
- ½ tsp. salt.
Rub the canned tomatoes in their own juice through a sieve. Peel the garlic, pass through a press and add along with sugar and salt to the grated tomatoes. Place the mixture on moderate heat, bring to a boil and simmer for 7 minutes. Then add the suneli hops, coriander, hot peppers and simmer for another 3 minutes. If desired, intensify the hot sauce by adding red pepper to taste. At the very end of cooking, put finely chopped cilantro and dill in the sauce.
Sour cream sauce
To make sour cream sauce, you need the following ingredients:
- 1 glass of sour cream;
- 4 tbsp. l. table vinegar;
- 2 tsp icing sugar;
- salt;
- ground black pepper.
Add 6% vinegar and powdered sugar to the table sour cream. Season with salt and ground pepper to taste. Mix everything thoroughly.
Sour cream sauce with horseradish and apples
To prepare sour cream sauce according to this recipe, you need to take:
- 1 ½ cups thick sour cream;
- 100 g horseradish root;
- 100 g of apples;
- ½ lemon;
- salt;
- sugar.
Wash the horseradish root, peel and grate on a fine grater. Wash the apples, peel them, remove the cores, and also grate the pulp and combine with horseradish. Add sour cream, season with salt, sugar, lemon juice and beat everything thoroughly with a wooden jar.
