Are you bored with ordinary cutlets? Do you want variety, something new and unusual? Try making cutlets with a variety of fillings. They are good because you can come up with a lot of different options based on your taste preferences.

Since the cutlets are declared "unusual", then the minced meat must be appropriate. You will need:

  • 1 kg of meat;
  • two medium onions;
  • two egg yolks;
  • two tablespoons of cream;
  • ½ - 1 teaspoon smoked paprika;
  • black pepper and salt (to taste)

Any meat can be used for minced meat, in any combination, for example:

  • beef + pork;
  • beef + lamb + pork;
  • lamb + chicken breast + pork;
  • lamb + chicken thigh;
  • pork + chicken thigh

Prepare the meat: wash, dry, remove veins, films, bones. Pass through a meat grinder along with onions, add egg yolks, cream, smoked paprika, salt and pepper and mix thoroughly. Once again pass the minced meat through a meat grinder, mix, beat on the table for 3-4 minutes (this will give the minced meat the necessary consistency). Cover with cling film and refrigerate for 2-3 hours.

During this time, prepare the filling. There are a great variety of filling options, you can simply come up with them on the go based on those products that you like best or that are in the refrigerator. Here are some examples.

  1. Fry grated carrots, finely chopped onions and red bell peppers in a skillet. At the end, season with tomato paste, salt and pepper. Mix with grated cheese.
  2. Fry the mushrooms and onions in a pan. Boil potatoes, make mashed potatoes, add mushrooms, stir. You can also add a little butter and grated cheese here.
  3. Boil cauliflower and / or broccoli. Fry onions and carrots, mix with cabbage. When cool, add cheese, a little Greek sauce. When roasting, you can additionally use a mixture of herbs "Mediterranean cuisine".

In most cases, grated cheese is used in fillings, which will melt during cooking and create a pleasant, tasty sauce inside, so add it to the filling last and when everything is completely cool. You can also use eggs, any vegetables, bacon, ham, seasonings, sauces and spices in the filling.

As soon as the minced meat is infused and the fillings are ready, you can proceed to the final stage. Take the required amount of minced meat, form a ball, flatten it in the palm of your hand, put the filling and shape the cutlet so that the whole filling is inside, and there is a layer of minced meat about 7-10 mm thick around. Do the rest of the zrazy in the same way.

Turn the oven to full preheat, line the baking sheet with baking paper.

Heat the skillet quite hard with a little oil and fry the patties for one minute on each side, then immediately transfer them to a baking sheet and bring to readiness in the oven at 180 degrees (about 8-10 minutes).

Serve cutlets with fresh vegetables or salads and any sauce.

This recipe uses a rather rare ingredient - smoked paprika. It is a common red bell pepper that is first smoked using natural oak chips, then dried and ground to a powder. Smoked paprika gives the meat a pleasant smoke aroma, as if the cutlets were fried on charcoal, like a kebab, and not in a regular frying pan! It should be noted that smoked paprika conveys aroma more accurately and contains much less harmful substances than “liquid smoke”.
