Lean pancakes with vegetable filling can be served in the form of rolls. You can use them with any sauce or sour cream.

- - 15 g fresh yeast
- - 3 pods of red bell pepper
- - 3 tbsp. wheat flour
- - 3 tbsp. water
- - vegetable oil
- - sugar
- - tomato paste
- - salt
- - 1 small eggplant
- - 1 head of onion

Step 1
Dissolve fresh yeast in a little warm boiled water. Add one tablespoon of sugar and a teaspoon of salt. Mix the ingredients thoroughly. Sift two cups flour, add yeast mixture and knead the dough.
Step 2
After 15-20 minutes, add a glass of the remaining flour and water to the dough. The mixture should be the consistency of thick sour cream.
Step 3
Cut sweet peppers, onions and eggplant into small cubes, mix with a few tablespoons of tomato paste and fry in vegetable oil. Add black pepper and salt to taste.
Step 4
Bake thin pancakes with the prepared dough. Put a small amount of vegetable filling on each piece and distribute in an even layer. Wrap the pancakes in rolls. Serve the dish with sour cream, soy sauce or soy mayonnaise.
