Vegetable cutlets with rice are a great dish for a fasting day or a light dinner. Every housewife can make such a dish at home, because no special skills in cooking are required for its preparation.

It is necessary

  • - one medium-sized carrot;
  • - 1/4 medium sized cabbage shakes;
  • - half a glass of uncooked rice;
  • - three potatoes;
  • - three onions;
  • - two eggs;
  • - 1/2 cup flour;
  • - salt and pepper (to taste);
  • - vegetable oil;
  • - breadcrumbs.

Instructions

Step 1

Pour 500 ml of water into a saucepan and put it on no fire. As soon as the water boils, pour the rice into it, season with salt and cook for 15-20 minutes (the rice should eventually not be slightly cooked). Turn off the gas, drain the water and rinse the groats.

Step 2

Peel carrots, potatoes, cabbage, onions and garlic and rinse well in cold water. Cut vegetables and mince.

Next, you need to slightly squeeze the resulting mass in order to remove excess juice (if this is not done, then more flour will be required for cooking, which will negatively affect the taste of the cutlets).

Step 3

In a deep bowl, mix the minced vegetables and rice, add eggs to the mixture, salt and pepper (at this stage, you can add your favorite spices or herbs to the resulting mass). Mix everything thoroughly, then pour flour into the minced meat and mix it again to get a homogeneous mass.

Step 4

Put a frying pan with a thick bottom on the fire, pour oil into it. Form small cutlets from minced vegetables, roll them in breadcrumbs and fry on both sides until golden brown. To make them bake faster, you can cover the pan with a lid when frying them.

Step 5

Put the finished vegetable cutlets on a dish and garnish with herbs. They can be served with any sauce and side dish.
