If you want to boil oyster mushrooms, they will be ready in about 15-20 minutes from the moment they are immersed in boiling water. It is only necessary to clean the mushrooms well beforehand, removing all the debris. To do this, it is recommended to soak oyster mushrooms in cold water before cooking. Peeled mushrooms (especially large ones) are best cut into several pieces. Frying or stewing oyster mushrooms also takes about 15-20 minutes. This mushroom does not need to be boiled beforehand.
Salted oyster mushrooms are very good. To prepare them for 3 kilograms of mushrooms, you will need about 200 grams of salt, 5-6 cloves of garlic, 5-6 black peppercorns, 50 milliliters of 9% table vinegar, spices (for example, dill, horseradish leaves) to taste. When salting in a hot way, it is necessary to boil the peeled and washed caps of oyster mushrooms for 10 minutes. Prepare the brine during this time. Mix salt, vinegar, pepper and spices, pour 500 milliliters of boiling water, boil over low heat for 2-3 minutes. Transfer the boiled mushroom caps to sterilized glass jars, adding chopped garlic pieces to each layer, then cover with hot brine. Seal the jars with sterilized plastic lids. After they have cooled to room temperature, refrigerate. After 7 days, you will have delicious salted mushrooms ready.

Oyster mushroom soup
If you want to make oyster mushroom soup, it is better to cook the broth separately from the hats, cut into pieces (cook for about 20 minutes, add peeled and diced potatoes shortly until ready). While the broth is preparing, the mushroom legs, cut into small pieces, must be fried in vegetable oil along with chopped onions (about 10 minutes). Then you need to add this mixture to the mushroom broth, salt to taste, put 1-2 bay leaves, 2-3 black peppercorns. After removing from heat, the dish should be infused under the lid for 15-20 minutes. When serving, you can sprinkle the soup with finely chopped herbs and season with sour cream.
