Spicy glazed chicken breasts are very soft, but not too juicy. Absolutely not fibrous, quite dense, the outside of the meat is covered with a pleasantly sharp crust. The sweetness of honey balances the acidity of the lemon.

It is necessary

  • For the dish:
  • - chicken breasts - 1 kg.
  • For the marinade:
  • - vegetable oil - 1 tablespoon;
  • - mustard - 1 tsp;
  • - ground hot pepper;
  • - ground black pepper;
  • - salt - 1 tsp;
  • - paprika - 2 tsp;
  • - lemon juice - 1, 5 tablespoons
  • For glaze:
  • - vegetable oil - 0.5 tbsp;
  • - starch - 1, 5 tsp;
  • - water, beer or cognac - 3 tsp;
  • - honey - 0.5 tbsp;
  • - the remains of the marinade.

Instructions

Step 1

Remove the skin from the chicken breasts and carve out the bones. You should end up with 4 pieces of fillet.

Start making the marinade. Combine vegetable oil, mustard, salt, paprika and lemon juice. Add red and black peppers to taste.

Step 2

Dip all the chicken pieces in the marinade, let it warm for half an hour, or in the refrigerator for three hours.

Step 3

Roll up sharp straws from the foil and place them along the baking sheet. Place wooden sticks across the baking sheet. You can use wooden skewers - they are the best for this purpose.

Step 4

Place the marinated meat on a makeshift wire rack. Preheat oven to high and place a baking sheet with chicken breasts inside. Reduce the temperature immediately to 200oC and bake for 15 minutes.

Step 5

Cook the frosting while the breasts are baking. Drain the remaining marinade into a bowl. Pour in cognac and vegetable oil there. Pour in the starch and stir the mixture well.

Step 6

Heat the frosting in the microwave for 30 seconds. Open the microwave every 5 seconds and stir the frosting. You can heat the frosting on the stove in a small saucepan. The frosting should be similar in consistency to a thick sauce. It is not necessary to bring the mass to a strong thickening.

Step 7

Open the oven slightly, turn the chicken breasts over and cover with hot icing. Close the door and bake for another 7 minutes. Open the oven again and turn the meat over. Glaze another side.

Step 8

Bake until the frosting is dry, which will take about 10 minutes. Remove the cooked chicken breasts in the hot glaze, cut them into slices and serve hot along with, for example, rice.
