Basic wafer roll recipe

- 250 g wheat flour;

- 1 tbsp. l. baking powder;

- 1 tbsp. l. Sahara;

- ½ tsp. salt;

- 3 eggs;

- 200 g of butter;

- 350 ml of milk;

- 1-2 tbsp. l. vegetable oil for lubrication.

Melt the butter in the microwave or over low heat and cool to room temperature. In a deep bowl, combine sifted wheat flour, baking powder, granulated sugar, and salt. In another bowl, beat the eggs very well, then add the melted and cooled butter and milk. Mix everything well. Make a depression in the middle of the dry mixture and pour the egg and milk mixture into it. Then knead the waffle dough, gently whisking all the ingredients until smooth. The dough should look like muffins. If desired, at this stage, one or more of the following ingredients can be added to the dough:

- 80 g of raisins or other soft dried fruits, cut into small cubes;

- 60 g fresh or frozen raspberries or blueberries;

- 50 g of toasted and finely chopped nuts;

- ½ ripe banana, cut into thin slices;

- 40 g of chopped bacon;

- 40 g of grated cheese;

- 20 g unsweetened coconut;

- 25 g of grated milk or dark chocolate.

Heat the waffle iron, brush it with vegetable oil and pour in about 125 milliliters of the cooked dough (or as much as indicated in the instructions for the waffle iron). Then flatten the dough with a wooden spoon, metal spatula or small ladle, leaving about 6 mm of empty space around the edges of the waffle iron. Close the lid and cook the waffle until golden brown. Then, very carefully, helping yourself with a spatula, remove the wafer and immediately, while still hot, roll it up with a horn or into a tube. Then cool and fill with the filling or serve with maple syrup, honey, jam.

Belgian waffle rolls recipe

To make Belgian wafer rolls, you need to take:

- 2 ½ tsp dry yeast;

- 700 ml of milk;

- 3 eggs;

- 170 g unsalted butter;

- 100 g of granulated sugar;

- 1 ½ tsp. salt;

- 2 tsp vanilla essence;

- 560 g of wheat flour.

Whisk dry yeast with 60 ml of warm milk. Let stand 5 minutes until the yeast dissolves. Then whisk in a deep bowl the yolks, the remaining milk (cold), and the butter that was previously melted and cooled to room temperature. Add granulated sugar, salt and vanilla essence into the mixture with yeast. Then add the sifted wheat flour in 3 portions, alternating with 2 portions of the egg and milk mixture. Beat the egg whites separately until soft peaks and pour into the dough. Close the bowl with ready-made waffle dough tightly with cling film and put in a warm place for an hour. During this time, the dough should approximately double in volume. Stir it to make opal. Heat the waffle iron and pour the amount of dough specified in the instructions into it, level it. Place the lid on the waffle iron and bake the waffle until golden brown. Then carefully remove and roll into a tube or horn.
