Thanks to the electric waffle iron, you can easily and quickly prepare delicious and fragrant waffles. They are used as cakes for a cake or rolled into tubes, which are served with various fillings: boiled condensed milk, butter, custard or protein cream, minced fruit or nut mass.
Cream fillings recipe
You can fill the wafer rolls with butter, protein or custard. Each of them is able to give the dessert a special taste, aroma and color (if you add various additives and food colors to the creams).
To make butter cream with milk and eggs, you need to take the following ingredients:
- 1 cup granulated sugar;
- 2 eggs;
- ½ a thin glass of milk;
- 200 g of butter.
First of all, grind the granulated sugar and eggs well. Heat the milk until warm and gradually, one tablespoon at a time, add it to the sugar-egg mixture, stirring constantly. Then put the resulting homogeneous mixture on a quiet fire and, without ceasing to stir, bring the mixture to a boil, then remove from heat and cool to room temperature. While the mixture is cooling, begin whisking the soft butter. Without stopping whisking, add the frozen mixture to the butter in small portions. When a homogeneous mass is obtained, you can add aromas.
Custard is perfect as a filling for wafer rolls. To prepare it you will need:
- 2 glasses of milk;
- 1 cup granulated sugar;
- 2-3 eggs;
- 2 tbsp. l. flour;
- vanillin;
- 50 g butter.
It is recommended to cook the custard in a heavy-bottomed enamel saucepan.
Pour milk into an enamel pan and put on a low heat. While the milk is heating, grind the eggs with granulated sugar in a bowl until smooth. Then put flour in the resulting mass and stir everything well so that there are no lumps. Then reduce the heat to low, and start pouring hot milk in small portions into the cooked mass, stirring everything thoroughly. When combined with 2/3 of the milk, pour the contents of the bowl into the saucepan with the remaining milk. So that the flour is brewed without lumps, and the cream does not burn, do not stop stirring, and do not increase the fire. When the cream thickens to the required consistency, turn off the heat and add the butter. While it is melting, stir the mass continuously. Then let the cream cool and only then add vanillin or lemon or orange zest.
Nut filling recipe
Wafer rolls can be filled not only with cream, but also with fruit or nut fillings. To prepare the nut filling you will need:
- 1 ½ cups of walnut kernels;
- 1 glass of granulated sugar;
- ¼ glasses of honey;
- ¼ h. L. ground cinnamon or cardamom.
Pass the peeled walnuts through a meat grinder. Then add granulated sugar, cinnamon or crushed cardamom and honey. Mix everything thoroughly until a homogeneous mass is obtained, with which then fill the finished wafer rolls.
You can make a nut filling using a different recipe. For him you will need:
- 1 glass of walnut kernels;
- 2/3 cup granulated sugar;
- vanillin.
Vanillin can be substituted with cinnamon or crushed cardamom if desired.
Peel the walnuts, select the kernels and crush them in a mortar. Then mix them with granulated sugar and lightly brown in a dry frying pan. Then add the vanillin on the tip of a knife and a little water to the nut-sugar mixture to make a gooey mass. Place the cooked nut mass on ready-made, still warm waffles and roll them up.
