Chicken liver is incredibly healthy, does not require a lot of cooking time and has a very delicate rich taste. It can be fried, stewed, baked, boiled or cooked into mouth-watering pancakes, which even children who simply need a liver for health and normal development will not refuse.
Baked chicken liver
Ingredients:
- 400 g of chicken liver;
- 1 onion;
- 5 tbsp. sour cream;
- 70 g of hard unsweetened cheese;
- 2 tbsp. wine vinegar;
- 1/3 tsp Sahara;
- a pinch of nutmeg and black pepper;
- salt;
- vegetable oil.
Fresh chicken livers should be a rich brown color with a smooth and shiny surface without blood clots and large vessels.
Rinse and dry the liver, cut off tough veins, and cut the chicken offal into medium pieces. Peel the onion, chop finely and fry in vegetable oil until transparent over medium heat for 2 minutes. Add the liver to the onion and cook for about a minute, stirring constantly with a wooden spatula. Season everything with sugar, nutmeg, ground pepper and salt to taste, pour over with wine vinegar and simmer for 5 minutes at minimum temperature.
Preheat oven to 190oC. Divide the contents of the pan into clay pots, cover equally with sour cream and coarsely grated hard cheese. Bake the chicken liver for 5-7 minutes until a golden cheese crust appears.
Chicken liver pate
Ingredients:
- 450 g of chicken liver;
- 1 carrot;
- 1 onion;
- 20 g butter;
- a pinch of ground black pepper;
- salt;
- vegetable oil.
Liver pate will be softer if you add a little broth from boiling offal during frying.
Cover the liver with water in a small saucepan and place over high heat. Bring the liquid to a boil, cook the offal for 10 minutes, then cool and cut. Remove the husk from the onion, chop it, grate the carrots on a fine grater and sauté the vegetables in vegetable oil. Stir in boiled liver into this frying, toss in a piece of butter and simmer for 5 minutes.
Allow the cooked mass to cool, transfer it to a blender and chop it. After that, pepper it, salt as needed, mix well and place in the refrigerator. Serve the liver pate with your favorite bread.
Chicken liver pancakes
Ingredients:
- 500 g of chicken liver;
- 1 onion;
- 2 chicken eggs;
- 3 tbsp. flour;
- salt;
- vegetable oil.
Process the chicken livers and grind them in a blender or meat grinder with onion quarters. Mix the resulting minced meat with eggs, flour and salt. Fry the pancakes in vegetable oil for 1-1.5 minutes on each side. Offer them for lunch or dinner to your family, even a fastidious child will not refuse such deliciousness.
