Once upon a time, robbers, in the forests, so that they would not be tracked down during cooking, cooked meat in deep pits on coals. Accordingly, at night, in the forest, the light of fire and coals was not visible and the smoke scattered, cooled down and did not rise up. This recipe allows you to recreate the taste of that robber meat at home.

Fresh pork meat - 1.5 kilograms, garlic - 1 head, bay leaf - 3 leaves, mayonnaise, ground black pepper, salt
Instructions
Step 1
A piece of pork is needed whole, preferably a neck or a ham. A piece of meat must be stuffed with garlic and bay leaves. The garlic cloves are peeled and cut in half, and the bay leaf is broken in length and then in half to form the leaf quarters. In the meat, cuts are made with a knife from all sides to a depth of 2 cm, half a clove of garlic and a quarter of a bay leaf are inserted into the cuts. There should be at least 10 cuts for filling.
Step 2
After stuffing, the meat must be tied with a piece of strong natural thread to prevent an unexpected change in the shape of the piece of meat during baking. Then rub the prepared piece of meat with salt, black pepper and gently coat with a thin layer of mayonnaise.
Step 3
Place the prepared meat on a baking sheet in the oven, cover with parchment paper on top and bake at 100 degrees for at least 8 hours. At the end of cooking, remove the parchment paper and continue baking the meat at 210 degrees for 10 minutes.
