Not all vegetables can be placed next to each other in the refrigerator. For example, tomatoes should not be stored next to potatoes. Unripe tomatoes are best left at room temperature. That way they can reach it. But you need to wash the ripe fruits, wipe them well with a towel, and then put them in a plastic container. As such, you can keep them in the refrigerator in a special compartment for vegetables for quite some time.

Cabbage and radishes are easy to keep in the refrigerator, because they keep moisture well. To do this, you just need to place them in plastic bags. Do not forget to pierce the bags in several places to allow air access. If you keep them in the refrigerator at zero temperature, they will remain crisp and fresh after a month.

But carrots in the refrigerator, unfortunately, will quickly wither, lose their freshness and strength, because it has a thin skin and loses moisture quickly. Therefore, if you want to prepare carrots for future use, for the winter, it is better to wash and grate them. Then you need to separate it in portions in plastic bags, roll it up thinner (for quick freezing) and store it in the freezer. Serve as much as you use at a time.

Frozen vegetables retain useful vitamins and minerals. For example, you can make a vegetable platter that you need for borscht. Chop the cabbage, add grated carrots and herbs of your choice (dill, parsley, celery). Mix everything and place in plastic bags in small portions. This assortment can be stored in the freezer for six months.

Potatoes can be stored in the bottom compartment of the refrigerator at freezing temperatures, but they should not be washed first.
