Beef liver is a necessary product in a person's weekly diet, if there are no contraindications. It nourishes the body with vitamins and amino acids, raises hemoglobin and supports the nervous system. In addition, liver dishes are a gastronomic pleasure if you choose the right recipe.

Liver cake

Ingredients:

- 500 g of beef liver;

- 1/2 tbsp. milk;

- 3 chicken eggs;

- 2 carrots;

- 1 onion;

- 50 g flour;

- 2 cloves of garlic;

- 180 g mayonnaise;

- 30 g of dill and parsley;

- 1/2 tsp ground black pepper;

- vegetable oil;

- salt.

Peel the onion and cut into thin half rings. Fry them in vegetable oil until golden brown over medium heat. Add grated carrots to the pan and cook for 5-7 minutes. Rinse the liver, remove from the film and cut into sticks. Place them in a blender bowl, pour in the milk and whisk until smooth. Mix the resulting mixture with egg, flour, pepper and salt.

Transfer the vegetable fry from the skillet to a plate and put the ovenproof dish back on the fire. Pour some butter into it and bake thin pancakes from the liver dough, spreading it out in a quick circular motion.

Crush the garlic cloves in a special press, mix with mayonnaise and chopped dill. Collect the beef liver cake by spreading the cooked cream over the cakes and covering with the onion and carrot mass. Brush the last layer with the leftover sauce and sprinkle with chopped parsley.

Puff pastries with beef liver

Ingredients:

- 500 g of yeast-free puff pastry;

- 300 g of beef liver;

- 2 onions;

- 1 chicken yolk;

- a pinch of ground black pepper;

- salt;

- vegetable oil;

- flour for rolling the dough.

Thaw the dough at room temperature. Pour the liver in a saucepan with cold water, bring it to a boil, remove the foam that appears with a slotted spoon and cook the offal under a lid at medium temperature for half an hour. Cool it down and turn it in a meat grinder. Chop the onion, fry it in vegetable oil, combine with minced liver, season with pepper and salt.

Roll out the dough and cut it into equal rectangles. Spread the filling on the halves, fold the edges of the patties and blind them with your fingers. Moisten baked goods with yolk using a cooking brush, spread on a baking sheet and bake at 180oC for 15-20 minutes.

Beef liver roll

Ingredients:

- 1 kg of beef liver;

- 1 carrot;

- 1 onion;

- 150 g butter;

- 100 g of processed cheese;

- 1 clove of garlic;

- salt;

- vegetable oil.

Cook the liver as described in the previous recipe and chop it. Fry the onions and carrots in vegetable oil, stir in the minced meat, add salt to taste and lay out in an even one-centimeter layer on a sheet of parchment in the form of a rectangle. Melt the butter and whisk with melted cheese and crushed garlic. Apply the oil mixture to the liver base, gently roll everything into a roll and refrigerate for 2 hours.
