Beef brains are rich in minerals. They are a gourmet product. Brains are not subject to long-term storage and therefore it is better to cook them right away. Brains are good for preparing second courses. They can be fried, boiled, stewed and baked.

It is necessary

    • Ingredients for the dish "fried brains":
    • 500 g brains
    • 1 tablespoon flour
    • half lemon
    • 2 tablespoons vegetable oil
    • 2 tablespoons vinegar
    • Bay leaf
    • black peppercorns
    • parsley and dill.
    • Ingredients for Brains with Capers:
    • 200 g brains
    • 20 g onions
    • 20 g carrots
    • 20 g parsley
    • 50 g butter
    • 10 g flour
    • 50 g capers
    • 20 g vinegar
    • salt
    • pepper.

Instructions

Step 1

Fried brains.

Soak the beef brains in cold water for 40 minutes. Then peel off the films. Place the brains in a saucepan and fill with cold water so that the water completely covers them.

Step 2

Add 2 tablespoons of vinegar, salt, 3 bay leaves, and 6 black allspice peas. Place the pot on the hottest burner. When the water starts to boil, reduce heat and continue cooking for 30 minutes.

Step 3

After thirty minutes, the brains need to be cooled in the broth. Remove the brains from the pot and let them dry a little. Then cut each piece into two pieces. Sprinkle with salt and ground black pepper. Dip the cooked pieces in flour. Fry on all sides in vegetable oil in a heated skillet. Roast the brains until crisp.

Step 4

Rinse parsley, dill and chop. Squeeze the juice out of half the lemons. Put the prepared fried brains on plates, pour over with vegetable oil and lemon juice. Sprinkle with chopped dill and parsley on top. This dish can be served with fried potatoes, green peas and green beans as a side dish.

Step 5

Brains with capers.

Boil the brains as above. Refrigerate, drain off excess liquid. Cut each half of the brain into two pieces. Next, salt, pepper and span in the flour, cut into pieces. Fry in vegetable oil until golden brown.

Step 6

Heat the remaining oil until dark brown, add the washed parsley leaves, quickly fry them. Pour in vinegar, add capers and boil everything for 1-2 minutes.

Pour the resulting sauce over the prepared brains when serving. Boiled potatoes in "uniforms" or fried potatoes are well suited for garnish.
