An original, nutritious and very healthy dish that goes well with fresh or boiled vegetables.
It is necessary
- - 730 g of brains;
- - 90 g wheat flour;
- - 40 g of butter;
- - 40 ml vinegar 9%;
- - 3 pieces of bay leaves;
- - peppercorns, ground pepper;
- - salt;
- - 180 g of onions;
- - 330 ml sour cream.
Instructions
Step 1
Add a little vinegar to cold water and soak the brains in it for 2, 5 hours. Then carefully remove the film from the brains right in the water, put them in a deep dish with a thick bottom, salt and pepper, add peppercorns, pour water and some vinegar so that the water slightly covers the brains.
Step 2
Turn on strong gas so that the water in the pan boils. Then close the lid and continue to cook the brains over low heat for about 25 minutes.
Step 3
Allow the prepared brains to cool directly in the broth, and then discard them in a colander and drain the water.
Step 4
Cut the brains into small pieces, season with salt, breaded in flour. Heat butter in a frying pan and fry the brains in it.
Step 5
Peel the onion, chop, fry in a separate pan until golden brown. Then transfer it to the brains, add sour cream, mix and put in the oven for 20 minutes.
