Stewed zucchini, like other vegetables, are frequent guests on the summer table. With proper processing, they retain a lot of vitamins that are so necessary for the body. They are prepared quickly, but they turn out tasty both from experienced housewives and beginners. Stewed zucchini is used for sandwiches and as a side dish for meat.

    • 1-2 zucchini (about 1-1, 2 kg);
    • 1 large carrot;
    • 1-2 onions;
    • 2 ripe tomatoes;
    • ground black pepper;
    • salt;
    • 2-3 cloves of garlic;
    • vegetable oil for frying;
    • water.

Instructions

Step 1

Rinse the zucchini thoroughly under running cool water. Clean them up. Cut the zucchini into rings 1 to 2 cm thick. If the seeds have already formed, cut the middle of the zucchini rings. Cut the prepared zucchini into cubes.

Step 2

Wash carrots, peel, grate on a coarse grater. Peel the onion, chop finely. Wash the tomatoes, chop finely or grate.

Step 3

Place the diced courgettes in a large skillet. Fill them with water so that it is about 1 cm higher than the zucchini. Cover the pan with a lid and put on high heat. As soon as the water boils, reduce the heat (the water should boil slightly), remove the lid and stir the contents of the pan.

Step 4

Put grated carrots to the zucchini, mix. Cover the pan with a lid and simmer for 10 minutes.

Step 5

Add chopped onions to vegetables, stir, simmer for 10 minutes.

Step 6

Add chopped tomato to zucchini, carrots and onions. Stir the contents of the pan. Continue stewing vegetables without covering the pan, evaporating all the water. Stir the vegetable mixture periodically to prevent it from sticking to the bottom of the pan.

Step 7

Once all the water has boiled away, pour some vegetable oil into the stewed vegetables. Season the dish with salt to taste. Fry the stewed zucchini for 10-15 minutes over low heat.

Step 8

Remove the skillet from the heat. Season vegetables with black pepper to taste. Add 2-3 finely grated garlic cloves. Mix everything thoroughly so that the pepper and garlic are evenly distributed.

Step 9

Place the stewed zucchini on a plate. Sprinkle them with finely chopped herbs if desired. Tasty both hot and cold with mayonnaise or sour cream.
