Meatballs in a tender sour cream sauce baked in the oven is a fairly light and tasty dish that does not contain a lot of fat. It can be prepared for a person recovering from an illness or a small child.
To make meatballs in sour cream sauce, you will need:
- 700 g of fresh meat, pork and beef in equal proportions;
- 2-3 medium-sized onions;
- 1 chicken egg;
- 1 medium-sized carrot;
- 2 tbsp. vegetable oil;
- 100 g of rice;
- 1 glass of thick sour cream with a fat content of 20%;
- 2 sweet bell peppers;
- 1 tbsp. wheat flour;
- 1 stalk of celery;
- ½ tsp granulated sugar;
- 1 root of parsley or parsnip;
- ground black pepper;
- 2-3 cloves of garlic;
- 100 hard cheese;
- fresh herbs;
- salt to taste.
If you want to cook such meatballs in a dietary version, you can use the same amount of chicken fillet for minced meat, and put onions and carrots in it without frying. In this case, use low-fat sour cream.
Pour 0.5 liters of water into a small saucepan and boil the rice in it until half cooked. Rinse the meat in cold water, blot it with paper kitchen towels, cut into pieces and turn through a meat grinder along with the garlic. Add rice to the minced meat, add a raw egg and knead everything well. Salt and pepper the minced meat, stir and leave to stand in the refrigerator for 20-30 minutes.
Chop the onions finely, peel and grate the carrots. Remove the stalk from the bell pepper, cut it in half, remove the core and cut into thin strips. Peel the parsley root, cut in half and cut into half rings. Cut the celery stalk across into thin slices.
Pour oil into a frying pan, put on fire, heat and put onions in it. Fry it over medium heat, stirring constantly, until golden brown. Put the grated carrots and peppers, celery and parsley root into the pan, continue to fry everything together with the onions for another 3-4 minutes, remembering to stir so that the contents of the pan do not burn. Add sour cream to the pan, salt, add granulated sugar, pepper. Dissolve the flour in one glass of cold boiled water, stirring it well so that there are no lumps. Gradually pour the mixture into the skillet, stir and bring the contents to a boil. Season the sauce with salt and remove the skillet from the stove.
Meatballs in sour cream sauce can be served as a separate dish. If you want to make it more satisfying, you can boil crumbly rice or make mashed potatoes for a side dish with meatballs.
Take out the minced meat, mold small meatballs from it. To prevent the minced meat from sticking to your hands, place a bowl of water next to it and periodically moisten your hands in it. Meatballs can be rolled in flour. Place them in a baking dish and top them with sour cream sauce. Preheat oven to 220 ° C and place a baking dish in it. Bake meatballs in sour cream sauce for 20-25 minutes, then take out the form and sprinkle its contents on top with cheese grated on a coarse grater. Place the dish again in the oven and bake the meatballs for another 10-15 minutes, until a crispy brown crust forms. Chop fresh herbs finely, sprinkle meatballs with it on top.
