Ingredients:
2-4 squid carcasses
2 tbsp. l. sour cream
1 tbsp. l. flour
1-2 tbsp. l. butter
Salt and black pepper
A little boiling water
Preparation:
Defrost squid, clean from entrails. Put in boiling salted water for literally 2-3 minutes until they turn white and the skin curls. Remove from water, let cool slightly. Peel off the remaining curled skin with a knife. Cut the carcasses into thin strips.
Put the pan on the fire, when it is well heated, put in the butter, let it melt and pour the squid into it. Fry them quickly over high heat (about 2 minutes), stirring occasionally. Squid pieces should curl up, the liquid (if any) evaporate. Sprinkle everything with flour and mix quickly, let the flour fry a little (10-20 seconds), then spread the sour cream and add boiling water so as to almost cover the squid. We reduce the heat, cover with a lid. Simmer for a minute, then you need to salt a little, pepper well, mix and simmer for another minute. We turn off the oven.
